Elderflower Spritz $10 - A light and crisp rose spritzer crafted with Kikusui Junmai Gingo Sake. It has a mouthful of fresh fruit aromas and a mineral finish with hints of yuzu and elderflower. A perfect starter to your lunch or dinner!
Summer Sunset $13 - A bright, refreshing cocktail crafted from an oolong tea infused rum with notes of ripe passion fruit and fresh citrus. (An egg white can be added to the cocktail to add extra depth for $3. Please ask your server)
Fukucho "Seaside" Sparkling Junmai Sake 500ml $48 - A sparkling sake for pet-nat lovers, female Toji Miho Imada (one of the few in Japan) uses a little white koji in this sake, resulting in citrus notes and refreshing finish. It has crisp notes of lemon-lime, guava and apple aromas with a soft, frothy finish. Try it with oysters, uni and sunshine.
Mana 1751 "True Vision" Yamahai Tokubetsu Junmai Muroka Genshu 720ml $65 - For advanced sake drinkers or the adventurous, this sake is made in the yamahai style (ancient and labor intensive method of producing sake), it is a muroka (non-charcoal filtered) and a genshu (undiluted). It's got A LOT going on. It has notes of tart yogurt, mushroom, honey, banana and steamed rice and an extremely creamy mouthfeel - we're talking bordering on olive oil here...but in the best way possible. If you want to try something new and interesting, this is the sake for you. It goes great with spicy food.
Konteki "Tears of Dawn" Daiginjo 720ml $70 - Konteki means “dew drops of the earth” while Higashiyama (the brewery name) translates to “eastern hill.“ Brewery workers have been known to start their days watching the sun rise over the mountains until the dew drops glisten as if they were the Tears of Dawn. This sake has lush notes of tropical banana, anise seed, and truffle. These same flavors come rushing through the full-bodied palate followed by a velvety and dangerously smooth finish. Pair it with our Iberico Shumai or Pan-seared Iberico pork.
Areyna Malbec $40 - Estate-grown Malbec that marks a moment in time in the evolution of Luján de Cuyo (Argentina), a historic winemaking region undergoing modern transformation. Aromas of raspberries and ripe red fruits. The mouth feel shows good concentration and structure, with a soft texture and sweet, round tannins. The wine has a long, lingering finish with fresh, lively acidity. Try it with our miso lobster mac & cheese or our chicken yakitori.
Forlorn Hope "Queen of the Sierra" White Blend $40 - Queen of the Sierra white estate blend was grown on the Rorick Heritage Vineyard in Calaveras County at 2000 ft elevation, featuring soils comprised of a layer of schist over dolomite-rich limestone. Composed of Riesling, Chardonnay, Albariño, Verdelho, and a very small amount of German/Alsatian varietals, the wine shows all of the aromatic complexity and textural presence that are the hallmarks of wines grown on the limestone of the estate. Try it with our Hamachi Kama.
Meinklang "Prosa" Frizzante Rose of Pinot Noir $40 - Sparkling Pinot Noir rosé from everyone’s favorite Burgenland darlings. Soft fizz, raspberry and strawberry flavors, moderate acidity, plush texture, with a creamy mouthfeel and a slightly smokey/flinty finish. As dangerous as it is delicious, you’ll want to buy two bottles because the first will disappear a little too quickly. Yes, it’s that good. Certified biodynamic and organic. Some blaufrankisch and zweigelt blended in.
Domaine de La Chapelle Macon Solutre Pouilly $50 - From the 80 year old vines planted by winemaker/owner Pascal Rollet’s grandfather. Naturally intense and concentrated, the grapes are carefully harvested by hand, preserving the bright apple and citrus fruit aromas and flavors that make this wine JUMP from the glass. This is rich, yet lively Chardonnay that offers vibrant apple and lemon flavors, melded beautifully with notes of spice and toasted nuts.
Broc Cellars Valdiguie $55 - This wine is from the Green Valley of Solano County, located just over the Vaca mountains from Napa. This wine comes from two vineyards, the Frei Vineyard and the Wirth Ranch Vineyard, both of which are dry-farmed and have average vine ages over 65 years. This style of wine was formerly known as Napa Gamay, and for good reason; the taste is reminiscent of Beaujolais with medium tannin and great energy, though more purple in color and with darker fruit. Vineyards are dry-farmed and have an average vine age of sixty years. Partial carbonic maceration gives the wine a light and lifted character.
Mother Rock White Blend $64 - An elegant blend of mostly Chenin Blanc, sourced from 5 different sites in the Swartland (South Africa). It has a lovely, pure nose of apple, apricot, and citrus, and a textured and nicely balanced palate. The nose is beeswax, honeycomb and a touch of roasted lime and struck match. White flowers on the edges, from some of the more aromatic varietals in the blend. Brilliant tropical fruits with a juicy, fleshy texture. It's a wine you hold in your mouth a bit longer - it just feels and tastes amazing, with just enough citrus to tie it all together. Try it with our chef's sashimi for two - the variety of grapes in the blend will pair with all types of different fish.
Craven Pinot Gris $64 - Pinot Gris isn't exactly an abundant grape planted in Stellenbosch (South Africa), but when planted, it is very special. Although it would appear as a 'white grape' it is in fact a lovely coppery/dark rose skinned grape. With this being the case, the winemakers choose not to waste that color, so the wine is fermented on the skins. Fruit is hand-picked, de-stemmed and then treated like a red wine. A floral top note before red cherry, Pink Lady apple, watermelon and a hint of earthiness. Medium-bodied with dense fruit, fresh acidity and nicely grippy tannins. The wine is bottled unfined and unfiltered. Try it with our TX Kobe Beef Skewers or Wagyu Katsu Sando, the acidity and tannins will cut through the richness of the dishes.
Kante Malvasia $65 - Made from chalky, limestone soils in Carso, this white wine is full of honeydew and yellow plums. Dry, delicate and delicious, with great minerality. Aromatically reminiscent of Friulano, with whispers of peach and apricot, it is soft and delicate and has a dry and cleansing finish. The wine is aged for one year in old, neutral barrel to give it complexity and texture.
